Ingredients

  • flesh of 2 ripe avocados (240g)

  • 2 ripe avocados, diced
  • 4–5 cherry tomatoes (or Cretan tomatoes), halved
  • ΒΌ red onion, thinly sliced
  • A handful of fresh parsley, chopped
  • 1 tbsp extra virgin olive oil
  • Juice of Β½ lemon
  • Sea salt & freshly ground pepper

Instructions

  • Toast the bread slices until golden and crisp.

  • In a small bowl, mash the avocado with lemon juice and a pinch of salt until smooth but still a bit chunky.

  • Spread the avocado mixture evenly over the toasted bread.

  • Drizzle with a little olive oil and sprinkle generously with crushed chili flakes.
