🍊 Orange-Roasted Carrots with Thyme

Ingredients

  • 4–5 carrots, peeled and sliced lengthwise
  • Juice of 1 orange
  • 1 tbsp orange zest
  • 1 tbsp olive oil
  • 1 tsp honey
  • A few sprigs of fresh thyme
  • Salt & pepper

Instructions

  • Preheat oven to 200°C (390°F).
  • In a bowl, mix orange juice, zest, olive oil, honey, salt, and pepper.
  • Toss the carrots in the mixture and place on a baking tray.
  • Scatter thyme sprigs on top and roast for 25–30 minutes, until tender and caramelized.
  • Serve warm as a side dish or salad topper.
