🍊🍰 Orange & Olive Oil Cake (Light and Fluffy)

Ingredients

  • 2 eggs
  • ½ cup Cretan olive oil
  • ¾ cup sugar
  • Juice and zest of 1–2 oranges
  • 1½ cups flour
  • 1½ tsp baking powder
  • A pinch of salt
  • Optional: powdered sugar for dusting

Instructions

  • Preheat oven to 180°C (350°F).
  • Beat eggs and sugar until fluffy. Slowly add olive oil, orange juice, and zest.
  • Mix flour, baking powder, and salt in a bowl. Add dry ingredients to the wet.
  • Pour into a greased loaf pan and bake for 35–40 minutes.
  • Cool completely and dust with powdered sugar if desired.
